This is my new favorite veggie. I love to cook with eat. We have been trying to incorporate more greens into our diet and it doesn’t get much greener than this beauty. Here is this simple recipe that I use:
2 T of EVOO
2-3 cloves of garlic (I’m a garlic lover, you can use less)
3-4 leaves of kale (you can use more or less)
3 stalks of bok choy
handful of spinach
splash of soy sauce
Place EVOO in wok and heat on med-high for about a minute. This should be enough time to get out your veggies from the fridge. Then use a garlic press and add garlic to wok. Chop greens and add them in as soon as possible. Toss frequently. Greens should begin to wilt a bit and turn a rich green. Add a splash of soy sauce about 2 minutes before serving. Enjoy!!
