Take Out Tuesday: Red Potato Salad



And so we enter holiday season....and a load of carbs and calories. Yippee! Well if you're anything like me, you may want a bit of a healthier option. Here is a fun recipe from my Grandpa:

Red Potato Salad


Ingredients
8-9 large red potatoes (choose organic if you can)
1- 1 1/2 cup of EVOO
6-7 stalks of celery, sliced lengthwise and chopped
6 green onions, chopped
handful of fresh parsley, chopped
1t-1T of salt (desired taste)

Place potatoes in a large pot. Cover with water, about 3 inches over potatoes. Boil over medium high heat for 45 minutes to an hour or until potato skin starts to crack (they should be tender). Drain water and let cool. Place potatoes in a large bowl and while still warm start to mash. Add the rest of ingredients. Combine and add desired amount of salt. Enjoy warm or cold!!


I also created garlic infused oil. The way to prepare is to add oil to a pan and cook for 1-2 minutes over medium hot. You should be able to see little bubbles forming on the pot. Remove from heat and add chopped garlic. Allow the garlic to sit in the oil for about 45 minutes to 1 hour. Separate garlic from oil and add to potatoes.

Purposeful Play With Your Toddler: Food

Last week we focused on food! I thought it was appropriate as we enter into this holiday season :).

Here were a few items I got off of Teacher Pay Teachers
Food Color Book (I made Lilly 2 books. One book she could color as she wished, the second I had her color the pictures with the corresponding color)
Food Matching (I printed 2 copies of this activity. I cut a cereal box open and adhered one copy to the box. I cut the other copy and allowed her to match them up.)
Food Vocabulary We use a lot of vocabulary cards will Little Miss. We have her say the cards and put them in a cup, bowl, bag. It's a great way of building her vocabulary and helping her combine two words. I have her say the name of the picture (milk) and what she is doing with it (in). I will most of the time say in and she places it in a bag/bowl/cup.

Here are the books we got at the library.

We definitely favor board books in our home. The Very Hungry Catepillar was by far the favorite this week. 1.2.3...peas was a close second. 

I love this book. It's such a creative way of introducing new foods.
This book is a wonderful story, but a bit long for Little Miss.

Some other fun ideas is to go on a picnic, try a new food, food stamping.

Fitness Friday: A GIVEAWAY






Hooray, Hooray! It's Fitness Friday!
And another weekend closer to Thanksgiving. MMMMM...lots of yummy food. 
I really do love this weather...probably because of all the yummy food it brings with it. Last night we had Homemade Chicken Noodle Soup. So good for the soul! We also had pumpkin pancakes with spiced whip cream. Yes it was delicious and calorie-free..nah just kidding. I've also been consuming yummy oatmeal in the morning...unfortunately I ran out half way through the week. So this morning I'm gonna get a bunch!!

Yummy Oatmeal Recipe:
Cup of Quick Oats
1/4 cup of milk
1/2 t of cinnamon
1 T of brown sugar
2 T of unsweetened coconut flakes
1/4 c blueberries

Microwave the milk and oats together for about 1- 1.5 minutes and then combine the rest of the ingredients. Delicious!!

Here was my week in Fitness:
Saturday: Barre, 4 mile run
Sunday: Fitness Blender HIIT
Monday: 6 mile run
Tuesday: REST
Wednesday: 3 mile run, 2 mile run
Thursday: Yogalosophy, Fitness Blender pilates, Barre

I'm not sure what I'll do today!! But....

FROZEN Weekend!!


This past Friday, we were had a play date with one of our dear friends at a nearby mall. The mall was opening their ice skating rink and had a free day of skating. Little did I know there would be Elsa and Ana there?! I was a bit star-struck myself. It was so magical to see Lil so in awe of them. These pictures were her first sighting of them. But as we hung around eating doughnuts and watching the ice skaters, she got more and more excited to see them. It was nice to have such a positive experience since ice-skating was a bit trickynext time we will get a walker.










And of course that evening we watched Frozen. A perfect way to start the weekend.

Fitness Friday!!


Happy Fitness Friday!!



It's been a while since I've been on to share. This past weekend was my birthday and Halloween. We had a lot of fun last weekend and this past week I just kinda took some time away from writing to absorb life a bit. I'll be posting my Purposeful Play post tomroow and next week is filled with some goodies, so keep checking back!

This week I'm proud to say that I was actually able to take a REST day. It's so difficult for me to not just try and get some sort of workout in. But then I realize that I'm human and need my body to recover. I'm continuing to love running and even though I have no plans for an upcoming race (besides our annual Thanksgiving run) I am running just as often as if I was (Thanks Win Detergent for keeping my clothes smelling fresh). This weather is my favorite for running. I love all the color changes in the trees and the sweet smell of rain. It really is beautiful and one of the many reasons I love fall.

This week in Fitness:
Saturday: barre, 1 mile run, CosmoBody yoga and ballet legs
Sunday: 10k Sunday
Monday: 4 mile run, yoga
Tuesday: REST
Wednesday: 7 mile total run, yoga
Thursday: 4.7 mile run (Sweater Weather Interval Run)
Friday: Barre
