Take Out Tuesday: Broccoli Cheddar Soup




Another yummy soup recipe!
This one is definitely my favorite I have made this season.

Broccoli Cheese soup! What more could you want. Veggies and cheese and so easy. I will say that my husband was not a fan of the consistency and said that it was more of a mousse than a soup. I’m still experimenting with the amount of cornstarch to add to make it thicker. I’ve tried both 1 teaspoon and 1 Tablespoon. The Tablespoon definitely made the soup more thick.

Ingredients
1 cup milk
½ cup cheese
1 ½ cup chopped Broccoli, steamed
1 t diced onion
1 t or 1 T of Cornstarch (depending on the consistency)
¼ t of chicken boullion


Place all ingredients into the Vitamix container.
Turn on Variable 1
Turn Machine on and quickly increase speed to Variable 10, then High
Blend for 5-6 minutes or until heavy steam escapes.

Take Out Tuesday: Harvest Soup


Soup Season is here!!

Well maybe I jumped the gun...it's still been in the 90's lastely. but I couldn't resist busting out my Vitamix and some yummy recipes.


This one I found in my Vitamix Recipe Book that came when we received our Vitamix.

It's an interesting combination of ingredients, but I sure loved it!!

Ingredients:
2 Granny Smith Apples chopped
2 Cups of Chicken Broth
2 T of White Wine
1/4 Onion
2 Large Potatoes, scrubbed and baked
1 celery stalk
1/4 t dried thyme
1/4t nutmeg
Pinch pepper
1 cup shredded cheddar cheese

  • Place all ingredients (except cheese) in the blender.
  • Select Variable 1.
  • Turn machine on and quickly increase speed to Variable 10, then High.
  • Blend for 6-7 minutes or until heavy steam starts to escape from the top.
  • Reduce speed to Variable 4, and add cheese.
  • Blend for an additional 15 seconds.
  • Enjoy with some Sourdough Bread.



I really enjoyed the consistency and taste of this soup. Although the combination of purple onion and white wine was a little tart. I might experiment with less.

Take Out Tuesday: Eggplant Fries



Eggplant Fries



It's an understatement to say that I LOVE fries!! I've made carrot fries, potato fries, zucchini fries, so EGGPLANT was next on the list. 


I must say that I have FAILED miserably at it. I thought for some reason that you could saute it in a pan with oil, like squash. I've tried that 4 times, thinking this must be the way!!

But the best way I've had it is grilled and of course as fries. I think you have to dry it out, otherwise it becomes a sponge.

Recipe: Panko Crusted Caesar Chicken


Panko Crusted Caesar Chicken



It's been a while since I've shared a yummy recipe. This one has become a family favorite. Last year we were using Emeals, which was incredibly helpful as I went back to work and the added time away made it difficult to meal plan. We currently are still subscribed to them, but I am using them as more of a guide.
This is a delicious meal, so be prepared to make it a favorite!!




Ingredients:
4 Chicken Breasts, thawed
1/2 bottle of Caesar Salad dressing
Panko Crumbs
Parmesan Cheese



  1. Set Oven to 375 degrees. 
  2. Place panko crumbs in a medium bowl and 1/2 a bottle of Caesar dressing in another medium bowl. 
  3. Set aside a large baking pan to place the chicken in. 
  4. Butterfly the chicken breasts and then cut each in half. This will allow for you to have chicken tenders. You can always have larger pieces. 
  5. Although I find this to be a quicker way to cook them when they are smaller sizes. 
  6. Dip each tender into the Caesar Dressing and then the Panko Crumbs. , Then place in the large baking pan. 
  7. Arrange them so they all fit and grate some Parmasan Cheese on top. 
  8. Place in oven for about 25 minutes, checking for doneness around 20 minutes. 
  9. Serve with quinoa and a salad. 
  10. Enjoy!!


Please take caution anytime you are cooking with raw meat. Sanitize and wash thoroughly!

Meal Planning Once Again

Meal Planning




Last year I was very diligent about meal planning. I scoured Pinterest and was on a mission to find meals for our family that were affordable and clean. Once school started and I went back to teaching, I just didn't have the time. We used Emeals for about 7 months, which helped me out a lot. I love this service, it takes all the thinking out, now if they could only come to my house and actually prepare my meals. 

Now that summer has come, I will have more time to pour over Pinterest again, hoping to make myself into a chef. :)

So here we go. We've budgeted this month and here is my plan all ready to go:

Meal Ideas

Quesadillas
Spaghetti
Bean and Cheese burritos
Panko Chicken
Chili
Nachos
Baked Potatoes
Breakfast for Dinner
Chicken Alfredo
Frittata


I've interspersed these throughout the month, duplicating many. I've tried many meals this past year and have began to find which ones work for our family and which don't. I've also kept in mind which meals have similar ingredients. This should make it more streamlined when it come to making meals. I have also learned to make my own pizza dough, which I feels saves me much time. I'm able to get 2 doughs out of one recipe.


So do tell...how does your family do it? Do you eat out once a week? What is your family favorite?

I can't wait to see if this really works. I'll be needing some ideas in case these ones become duds :).

Recipe: Sweet Potato Chips

Last night I decided to switch from the planned sweet potato fries to sweet potato chips. I will say that I probably needed to cook them longer, but they were very yummy anyway.

Ingredients:
4 small sweet potatoes (I think I used yams)
1 TBSP of EVOO
A few good grinds of Himilayan Sea Salt and Pepper

Preheat oven to 400. Peel sweet potatoes. Slice potatoes so you are creating disk like slices. You can also use a mandolin for this as well. Place sweet potatoes in large Ziploc bag with EVOO, Sat and pepper. Make sure all are coated. Set aside until ready.
When ready, place sweet potatoes in a single layer on a cooking sheet. Place in oven for 30 minutes checking after 20 minutes. 


I place mine in for 25 minutes and although they were cooked, they were quite crispy.

Recipe: Crockpot Meatball Sandwiches (Emeals Inspired)


Since I've begun using Emeals and posting my pics on Instagram, I've been getting some requiest for recipes. Here is one of the simpler ones.

Ingredients:
Homestyle meatballs (I use Safeway brand)
1 16 oz jar of Tomato Basil Spaghetti sauce (I use Safeway)
1 pkg of Sourdough Sandwich Rolls
1 pkg of Provolone Cheese (I use Lucerne)

Turn Crockpot on High. Add Meatballs and sauce. Cook for 4-5 hours, turning occasionally
Set oven on broil.
Place Sandwich rolls open with meatballs and provolone on rolls. Cook until cheese has melted.

Enjoy with a yummy salad!

Fitness Friday

Health
We've been eating pretty well. I've given up my meal planning and began to rely on Emeals to provide me with help. Being back at work is difficult. Kiddos to those of you that love to cook and plan meals. It was just too much stress!! Check out emeals though, it's a great investment.

Monday: Weeknight Enchiladas and 
Tuesday: Sweet and Spicy Chicken Breasts
Wednesday: Broiled Tilapia
Thursday: Turkey Meatloaf
Friday: Turkey and Provolone Meatloaf Sandwiches
Saturday: Salisbury Steak
Sunday: Family Dinner

It also includes a shopping list with most items discounted. Love, love, love it!!



Fitness
I just finished another half. I decided this was the year I would run a half once a month. So I've got two more to go!! I've been trying to incorporate more weight training and stretching into my workout routine. I've also started two challenges for the month of October!!

Sunday: 13.1 Urban Cow Marathon!!! PR time 1:48:33
Monday: rest
Tuesday: 3 mile run, 60 squats, 5 push-ups  
Wednesday: 20 minutes yoga, 15 minutes blogilates video, 60 squats and 5 pushups

I'm so excited for some new things!! (1) today I get to help up at my nieces school warming up kiddos!! I love setting an example of how important staying healthy is. I know that running isn't for everyone but fitness IS fun!! It's all about ATTITUDE!! (2) I get to help run this lovely blog hop!! I'm so excited!! I've got some fun ideas but am open to challenges and themes!!

Health and Fitness

Hooray!! Glad to be back to this. I always look forward to it.
Eat
We are in the second week of the Emeals planning. Its going really well. I love that I don't have to meal plan. If I don't like something or I know it won't be a family favorite I just modify it. It's great because the meals are based on what is on sale at Safeway. It's been such a life saver. Not so much a time saver, but I am learning to adjust my schedule.

Do
I've been doing lots of running. I've been trying to get up early and go for a run. Its's so quick and I feel great the rest of the day. However, I have been experiencing some tight knees. I've been bad with my stretching and yoga. I tried Blogilates 100 burpee challenge and did not finish it. Boo! But hey I've got a challenge to complete. I'm so hard on myself due to my competitiveness that I am easily discouraged and I get upset with myself. But I can be perfect at everything, there's no fun in that.

Next up are:





It's hard to get some of my reading in. I've fallen far behind on my Bible reading plans lately and am excited about getting those completed. But these books are so tempting to read instead. Until I finish my plans, they sit quietly on my nightstand.

Health and Fitness: Back to School Edition

Well its back to school for me!! First week of school is done. I can't believe how much I miss teaching. It is such a privilege and I am so blessed to have the job I do!! Even with getting back to work I've been trying to get up early and go for a run. There has been lots of fires in Northern California, which has definitely affected the weather.


Saturday: 4 mile run
Sunday: 4 mile run
Monday: 5 mile run
Tuesday: 30 minutes of yoga
Wednesday: 5k run
Thursday: 4 mile run, leg workout resistance bands
Friday: Run and ab workout (planned)


Health:
Well this week I had to choose easy options because it was back to work for me and I still need to finesse my week. We are planning to do emeals soon, so I'm hoping that will help me out a lot. This week meals included pizza, spaghetti, veggie chili, burritos, BLTs, and grilled chicken. Can't get easier than that :)

Meal Planning Monday!!


Okay! So here it is. I think we've figured it out. Looks like we are gonna keep our Emeals plan and use it. This first week back to school (School actually starts tomorrow but we had meetings) I was definitely in no mood to make the meals I had planned. Plus we had a few that did not turn out well, Polenta Kale Spirals, not so much :).

Well we will officially start our emeals plans next week, but I did borrow a few for this week.
Hope it goes more smoothly than last week!

Tuesday: Veggie Chili
Wednesday: Spaghetti
Thursday: Grilled Chicken and Veggies

What's For Dinner Week 9

Well I'm back to meal planning. I like it too much. Even though we signed up for emeals, I'll be using it for new recipes, but we are not totally committing to it. 

I love being creative and it's a control issue probably, but if I want my family to eat healthy, I've got to do it! 

Here are this weeks meals (most from cookbooks I have around the house). I also used this book I picked up from the library:

No, we haven't taken the plunge to vegan, but I think that while trying to stay within a budget and eat healthy, you can't go wrong with veggies!!

This book has a wealth of yummy meals. Can't wait to share.


Monday: Braised Cabbage Rolls, hummus and pitas
Tuesday: Crockpot Teriyaki Pineapple Meatballs over Quinoa
Wednesday: Creamy Green Enchiladas
Thursday: Grilled Chicken and Wilted Spinach Salad with Spocy Peanut Dressing
Friday: Nachos
Saturday: Hot and Sour Noodles
Sunday: Family Dinner
