Yummy Vegan Chocolate Cupcakes

Being the health nut that I am, I'm always on the lookout for vegan, low sugar sweets. But most of the time I find vegan or gluten free this to be loaded with sugar. This makes me upset.
I received a cupcake recipe book at my shower and came across a recipe for Vegan Chocolate Cupcakes.

The first time I made these I didn't add sugar. The second time I cut it in half, which was still a whopping cup for 12 cupcakes. I noticed that the first batch was more cocoa-y and the second batch was much tastier, as my husband ate a few (That is a HUGE victory!).

Here is my adaptation to the recipe found in 500 Cupcakes:

Dry Ingredients:
2 cups flour
1 cup sugar
4 TBSP of cocoa
Pinch of Salt

Wet Ingredients:
1/2 cup applesauce (I used an organic TreeTop apple sauce pouch)
2 cups cold water
2 tsp of white vinegar
2 tsp of baking soda

Additional: 1/2 cup Ghiradelli 60% dark chocolate chips

Preheat oven to 375 degrees. Combine dry ingredients in large bowl, wet ingredients in medium bowl. Then combine the wet with the dry ingredients and add 1/2 cup of dark chocolate chips.
Spray muffin tins. Add cupcake mixture to muffin tins, about 2/3 full. Bake for 18-20 minutes. Cool for 5 minutes before removing.

Enjoy!

Baking: Banana and White Chocolate Bundt Cake

MMMMMMM!!! We are baking up a storm at the Hurley household. Tonight's recipe is Banana Bundt Cake. I added White Chocolate Chips for extra yumminess. I also use Whole Wheat flour instead of white unbleached.

Recipe courtesy of Living Gourmet:

Ingredients:

2 ½ cups flour – sifted
4 ripe bananas
4 egg yolks
½ cup milk
1 tablespoon vanilla
1 ½ tsp. baking powder
1 cup sugar
½ cup butter

Topping:

Chocolate chips
Instant coffee
Brown sugar

Preheat Oven 350 degrees:

Cream the butter, sugar and bananas in a mixer until smooth and creamy.

Add the eggs, milk and vanilla and continue to cream.

Add the flour and baking powder and mix until smooth and creamy.

Place in a buttered bundt pan.

Top the cake with chocolate chips, brown sugar and instant coffee.

Bake about 30-35 minutes or until toothpick comes out clean.

This is a delicious cake and a great way to make use of those ripe bananas!!

Baking: Baked Apple Pie Donuts

My love for pinterest has grown immensely...especially because of the baby and my love for baking. I found a wonderful recipe for baked apple pie donuts (thank you Amy Clark). I froze all my apples this year in hopes of making delicious apple treats this holiday season. So tonight's baked treat will soon be here...yummo!

Here is the recipe, but be sure to visit Momadvice for more great tips and recipes.

Baked Apple Pie Donuts

1/4 cup of lightly packed brown sugar
1/4 cup of white sugar
1 1/2 cups of bite size chunks of apple, peeled and cored (approximately 2 apples)
1 1/2 cups of all-purpose flour
1 3/4 tsp baking powder
1/2 tsp kosher salt
1 tsp nutmeg
1/3 cup of cold butter, cut into small pieces
1 egg
1/4 cup of milk
For sugar & cinnamon topping:
1/4 cup of butter, melted
1/3 cup of sugar
1 tsp cinnamon powder

Directions:

Preheat your oven to 350F. Whisk the flour, baking powder, sugars salt and and nutmeg in a bowl. Add the cold chopped butter, cut into tablespoons. Cut the butter with the flour mixture until the mixture resembles coarse crumbs with a pastry blender or fork.
In a separate bowl, beat the egg. Mix in the milk and fold in the chopped apples. Add the egg mixture to the flour mixture. Stir using a spatula or spoon making sure not to overmix. Place two spoonfuls of batter into a greased donut mold pan.
Bake for 15-18 minutes or until the donuts are just golden. Allow to cool for five minutes. Unmold each donut gently and lightly brush each with the melted butter. Dunk in a bowl with the sugar and cinnamon mixed in. Shake off excess sugar and serve immediately.
