Health and Fitness Week 28

Meal planning went great this week. Planned for all my meals and was able to make them all this week. 

I made some awesome Salmon this week. 

Lemon Dill Salmon
Preheat oven to 400
In a baking pan combine olive oil (2T), 3 pressed garlic cloves, salt, pepper. 
Dredge salmon fillets in mixture and cover salmon with lemon slices, more pressed garlic, and fresh dill (2t)
Cover and bake for 35 minutes!! 

So delish!

Here was my week in fitness:
Saturday: 10 miler with a girlfriend
Sunday: 3.5 mile run
Monday: 3 rounds of Slender Abs by Tone it Up
Tuesday: Rest
Wednesday: 4.5 mile run
Thursday: 7.5 mile run
Friday: (planned) short run and some yoga

So excited as we are headed to Tahoe to cheer on my hubby for his SECOND Tough Mudder.

  1. John is still contemplating if he's going to do tough mudder. Have fun!

    1. Hubby had a BLAST!!! He is so ready to do back to back Tough Mudders. He loves the camaraderie. I bet John would too.

  3. My neighbor just gave me a HUGE bunch of fresh dill from his garden...I think we need some fish this week :-) Keep up the great work on your runs mama! You are such an inspiration!

    1. JEALOUS!! I seriously was never really into dill, but boy is it yummy. Making Tzazaki sauce this week. DELISH!!! Thanks again for the encouragement.
